INVERTASE
Description
An invertase is an enzyme of the glycoside hydrolase family. In the presence of water molecules, it allows the breakdown of sucrose into glucose and fructose, known as « invert sugars », hence the name of the enzyme.
Invertase is involved in the digestion process. It is released by the cells located in the mucous membrane of the small intestine.
