Maltase
Description
Maltase is an enzyme involved in the breakdown of maltose, a disaccharide formed from two glucose molecules. Biochemically speaking, maltose is hydrolysed by maltase, resulting in the release of the two glucose molecules that make up maltose.
Maltose itself is derived from the breakdown of the starch macromolecule, the enzymatic reaction of which is handled by amylase, an enzyme found in saliva and pancreatic juices.
Maltase is synthesised by the human body in the cells of the intestinal mucosa, but also by plant cells, bacteria and yeast.
