Description
Amylase is an enzyme found in pancreatic juice and saliva. It is involved in digestion and is responsible for breaking down starch macromolecules into smaller molecules, such as maltose. The catalysis of maltose is then taken care of by a specific enzyme: maltase.
Amylase plays an important role in the breakdown of carbohydrates. By breaking down complex carbohydrates such as starch into simpler sugars that are more easily assimilated by the body, it facilitates digestion and is useful in cases of dyspepsia.
