Sulforaphane is a natural organosulfur compound possessing numerous biological properties referenced by scientific studies. It is present in cruciferous vegetables such as broccoli, cauliflower and Brussels sprouts, in the form of an inactive precursor, glucoraphanin, which belongs to a large family of molecules, the glucosinolates, of which more than 120 forms have been identified.

Thus, cruciferous vegetables do not directly contain sulforaphane, but its precursor which must undergo a transformation to become active. This conversion relies on the action of a key enzyme, myrosinase, which hydrolyses glucoraphanin to produce sulforaphane. However, this enzyme is extremely sensitive to heat. Cooking, even gentle, leads to its degradation and thus limits the formation of sulforaphane from its precursor.
