Quercetin, also known as quercetol, is an organic compound of the flavonoid family. Quercetin is found in many fruits, vegetables and plants and is thought to be responsible for their colour. It is notably found in capers, peppers, cocoa, onions (especially red onions), blueberries, blackcurrants and raw broccoli. Quercetin is reputed to be the most active flavonoid. Although we are far from knowing everything about it, its antioxidant, anti-inflammatory and antihistaminic properties have been observed in numerous in vitro and in vivo studies.
