Gastric acidity lies at the heart of efficient digestion. Produced by the stomach in the form of hydrochloric acid (HCl), it results from the combination of hydrogen ions (H⁺) and chloride ions (Cl⁻). The higher their concentration, the more acidic the pH — a key factor in properly initiating digestion.
An acidic environment (pH between 1 and 3) notably helps activate pepsin, an enzyme essential for the breakdown of proteins found in food, including meat, fish, eggs, legumes, yoghurt, etc. It also promotes the absorption of essential micronutrients (iron, calcium, magnesium, zinc, vitamin B12, etc.). Furthermore, this acidity acts as a first line of defence by destroying most ingested micro-organisms.
When gastric pH increases and becomes less acidic, this is known as hypochlorhydria. This reduction may occur with age, but it may also result from chronic infections, particularly those linked to the bacterium Helicobacter pylori, or persist after discontinuing acid-reducing treatments such as proton pump inhibitors (PPIs).
Insufficient gastric acidity can disrupt digestive balance. It slows protein digestion, promotes feelings of heaviness, bloating and reflux, and impairs the absorption of essential nutrients. In the longer term, it may weaken the gastric barrier and contribute to an imbalance in the intestinal microbiota by promoting the survival of micro-organisms capable of colonising the small intestine, as occurs in SIBO (Small Intestinal Bacterial Overgrowth).
